If you really want to go professional with your ice cream making, a compressor-style model is the way to go. This type of ice cream maker has a built-in refrigerating unit, so there’s no need to wait for a bowl to freeze before you make ice cream. Since it cools the cream as it churns with an actual refrigerating mechanism, the texture of this ice cream is superior, and it will keep overnight without crystallizing. But all of that comes at a price. This will need to live in the garage, or its own room, because the machine weighs 38 pounds. Each model is hand made in Italy and usually costs over $1,000. Right now it’s on sale for almost half price, so this is a seriously good deal on a seriously excellent machine, should you have the passion, space, and means.
